Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
In the bowl of a stand mixer, cream together butter, peanut butter, and Swerve sweetener until light and fluffy.
Add egg and vanilla and mix well.
Add the almond flour, coconut flour, cinnamon, salt, baking soda, and unflavored gelatinand and stir well to combine.
Stir in the chips, coconut and pecans.
Scoop cookies by the tablespoon onto a lined sheet pan. Use a fork to flatten slightly.
Bake for 7-8 minutes or until golden around the edges.
