Ingredients

  • 1/2 cup butter softened
  • 4 Tbsp. unsweetened peanut butter (only nuts and salt)
  • 1/3 cup Swerve Brown Sugar
  • 1 egg
  • 1 tsp. vanilla extract
  • 1/2 tsp. cinnamon
  • 1 1/4 cup almond flour
  • 1 Tbsp. coconut flour
  • 1/4 tsp. salt
  • 3/4 tsp. baking soda
  • 1 Tbsp. unflavored gelatin
  • 1/2 cup sugar free chocolate chips (I used Lily's)
  • 1/3 cup unsweetened shredded coconut
  • 1/3 cup finely chopped pecans

Instructions

  • Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
  • In the bowl of a stand mixer, cream together butter, peanut butter, and Swerve sweetener until light and fluffy.
  • Add egg and vanilla and mix well.
  • Add the almond flour, coconut flour, cinnamon, salt, baking soda, and unflavored gelatinand and stir well to combine.
  • Stir in the chips, coconut and pecans.
  • Scoop cookies by the tablespoon onto a lined sheet pan. Use a fork to flatten slightly.
  • Bake for 7-8 minutes or until golden around the edges.
