4th of July Keto Fruit Pizza

A soft sugar cookie Keto crust with a cream cheese frosting and topped with sliced fruit

Happy 4th of July everyone!

To celebrate America’s independence, I decided to try a KETO fruit pizza! This is such a great summer dessert – it’s refreshing and is a hit at 4th of July parties!

Like all of my recipes, this is really easy to make and guilt-free!

The original recipe can be found here at The Best Keto Recipes blog. I used their keto version, and was a little creative with the topping for independence day.

For the crust:

Step 1: Preheat the oven to 350 degrees Fahrenheit and place parchment paper on a pizza pan to make the pizza easier to slice and remove.

Step 2: In a bowl, mix the melted butter, almond flour, sweetener, and vanilla extract until a soft dough forms. I used the paddle attachment on my kitchenaid mixer.

Step 4: Place the dough onto the parchment paper and layer with another piece of the parchment paper. Use a rolling pin to form the dough into a pizza. Tip: If you don’t have a rolling pin, just use your hands to mold the dough into a pizza. My crust was about 11 inches in diameter.

Step 5: Bake the crust 6-7 minutes until lightly browned and completely set. BE CAREFUL NOT TO OVERCOOK.

Step 6: Put the crust in the fridge to cool while making the cream cheese topping.

For the cream cheese topping:

Step 7: Using a hand mixer or kitchenaid mixer, combine the cream cheese, sweetener, cream, almond milk and vanilla and blend or mix until smooth.

Step 8: Spread the cream cheese frosting on the crust and top with fruit and whipped cream.
