Keto Mint Chocolate Whoopie Pies

Equipment: This dessert requires a whoopie pie pan or a muffin top pan. I bought mine for $12 from Amazon here!

One of my mom’s favorite restaurants has these to-go gingersnap whoopie pies when you leave the restaurant. We go there sometimes just for the free whoopie pies for dessert. I noticed these keto whoopie pies in my Keto Comfort Foods cookbook and it reminded my mom’s favorite to-go dessert so I had to try the keto version.

I’m so satisfied with how these mint chocolate pies turned out, I’ll experiment with a keto gingersnap version next!

These are so decadent and filling, you’ll only need to eat one to feel satisfied. If you love mint chocolate (my favorite flavor combination), then you will love these pies.

This recipe comes from the Keto Comfort Foods cookbook by Maria Emmerich. She has tons of creative food and dessert recipes in this cookbook. Her recipes tend to require additional equipment and time to make, but I’m so excited to try more recipes from her Keto Comfort Foods cookbook and share them with you.

Step 1: Preheat oven to 350 degrees Fahreinheit and grease the whoopie pie pan

Step 2: In a mixing bowl, whisk together the flour, cocoa powder, baking soda, and salt

Step 3: In a separate bowl, beat the butter, swerve sweetener, eggs, and mint extract with a kitchenaid or hand mixer until smooth.

Step 4: Stir the wet ingredients into the dry ingredients.

Step 5: Spoon the batter into the prepared pan, filling each well about 2/3 full and bake for 10-12 minutes.

For the Filling:

  • Step 6: Using a hand or kitchenaid mixer, cream the butter, cream cheese, and sweetener together until well combined. Add the heavy cream to thin it out, then mix in the mint extract.

Assembling the Whoopie Pies:

  • Step 7: Place one pie side up on a plate and place four tbsp of filling on the pie. Then top with another pie.

Step 8: Repeat for the rest of the pies and Enjoy!!

For the Pies:

  • 1 1/4 cups Almond Flour
  • 1/4 cup Unsweetened Cocoa Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1/4 cup Unsalted Butter (softened)
  • 1/3 cup Swerve Confectioners Sugar
  • 3 Eggs
  • 1 tsp Mint Extract

For the Filling:

  • 3/4 cup Unsalted Butter (softened)
  • 6 ounces Cream Cheese
  • 3/4 cup Swerve Confectioner's Sugar
  • 1 tbsp Heavy Whipping Cream
  • 1 tsp Mint Extract
