Keto cookies filled with gooey chocolate and nutty goodness. Best of all, these are only 115 calories and 1.22 g carbs per cookie!

One of the positive things that has come out of this stay at home order has been spending more quality time with family. My fiance and I started themed movie nights with my parents last week. My fiance and Dad love the Spaghetti westerns so we watched Once Upon A Time In The West. We ordered BBQ, put on our cowboy boots and I wore my lace dress. The guys wore cowboy hats and the bolo tie and belt buckle Aaron’s grandpa made for our Wedding Welcome Party.

I was trying to think of a cowboy dessert, when my mom told me about keto cowboy cookies. I’ve never heard of them before. They are a dense cookie – full of chocolate chips, nuts, and cinnamon. They were a hit at our western movie night party!

The original recipe is from Texas Granola Girl – I really loved her recipe. This is an easy one to make.

Step 1: Preheat oven to 350 degrees. Line a baking sheet with parchment paper.

Step 2: Using a stand or hand mixer, cream together butter, peanut butter, and Swerve sweetener until light and fluffy.

Step 3: Add egg and vanilla and mix well.

Step 4: Add the almond flour, coconut flour, cinnamon, salt, baking soda, and unflavored gelatin and and stir well to combine.

Step 5: Stir in the chips, coconut and pecans.

Step 6: Scoop cookies by the tablespoon onto a lined sheet pan. Use a fork to flatten slightly. This recipe yields 26 cookies.

Step 7: Bake for 7-8 minutes or until golden around the edges.

Ingredients

  • 1/2 cup butter softened
  • 4 Tbsp. unsweetened peanut butter (only nuts and salt)
  • 1/3 cup Swerve Brown Sugar
  • 1 egg
  • 1 tsp. vanilla extract
  • 1/2 tsp. cinnamon
  • 1 1/4 cup almond flour
  • 1 Tbsp. coconut flour
  • 1/4 tsp. salt
  • 3/4 tsp. baking soda
  • 1 Tbsp. unflavored gelatin
  • 1/2 cup sugar free chocolate chips (I used Lily's)
  • 1/3 cup unsweetened shredded coconut
  • 1/3 cup finely chopped pecans

Instructions

  • Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
