When Aaron and I first started dating, one of my favorite at-home date nights was making craft cocktails together. One weekend, Aaron bought the Texas Cocktails book by Nico Martini (which has a signature cocktail from the Houston Watch Company where we had our first date), and we spent an entire Saturday afternoon earmarking our favorite recipes. We picked up our cocktail essentials from our favorite local liquor store (Specs) and perused the sprawling aisles of wine from different regions. Aaron knows quite a bit about scotch and wine, so we love discovering and trying new wines from Specs. After cooking dinner together, Aaron made me a What Really Happened and a Whiskey Sour for himself. It is still one of my favorite date nights.
Fast forward a year, and we’re now making keto cocktails! What I’ve learned since then is that all (good) cocktails contain one simple ingredient: simple syrup.
After testing three versions of this keto syrup before getting it just right, I have a few tricks to share when making this recipe.
- Not all keto certified, zero calorie sweeteners are the same when it comes to making simple syrup. I do not recommend using Swerve sugar as it makes your syrup look brown and gross in my opinion…still tastes great though. You need to use Allulose sugar which (like Swerve) also has no glycemic impact on your blood sugar, and I’ve noticed it does not recrystallize after boiling. I’ve researched that Anthony’s erythritol will also yield clear simple syrup, but I haven’t tried it yet.
- Unless the cocktail requires it, I recommend storing the non-flavored simple syrup in a tightly sealed container (mason jars). Refrigeration tends to make the non-flavored syrup recrystallize.
- Xantham gum thickens the syrup and is a keto substitute for cornstarch.
Unflavored Keto Simple Syrup
Step 1: Place the water, sugar, and half of the xantham gum in a small pot on the cold burner. Turn the burner to medium/high heat and whisk continuously until the xantham gum dissolves into the mixture.
Step 2: Continue whisking periodically until the mixture begins to boil. Add five drops of liquid stevia and the remaining xantham gum, and whisk for 1 more minute.
Step 3: Then remove from the heat and pour into a sealed container (I used my mason jars).
Keto Simple Syrup
- 1 cup Water
- 3/4 cup Allulose or Anthony's Erythritol (Do not use swerve for this recipe)
- 1/16 tsp Xantham Gum
- 5 drops Liquid Stevia
